Since 1929, nestled high in the mountains of Jinotega, Nicaragua, our family has cultivated Arabica coffee with unwavering dedication. Primos, grown under the protective shade of trees, is meticulously harvested by hand and subjected to thorough washing before being sun-dried. This commitment to excellence not only ensures the finest specialty coffee but also upholds our responsibility to Nicaragua's natural beauty and its people.
From our farm to your home, each cup promises an exceptional experience. During May, our farm fills with the sweet fragrance of coffee blossoms. These blooms give rise to small coffee cherries, nurtured slowly under the sheltering shade for eight months, enriching their flavor profile.
At the peak of ripeness, each cherry is carefully hand-picked. Using natural spring water, we daily wet mill the cherries to remove their outer layers of skin and pulp. Following this, the beans undergo a 36-hour fermentation process before being meticulously washed to perfection.
Our fully washed beans are naturally dried to achieve an optimal moisture content of 11-13%. We meticulously adhere to quality standards, ensuring no more than 5 defects per 300 grams, with no primary defects. Once dried, these green beans are promptly shipped to our Texas facility, where they are stored in hermetic bags under controlled temperatures to preserve their freshness.
These green beans are intended for home or small-batch roasting and must be roasted before brewing. We recommend a medium roast profile to accentuate the beans' delicate nuances.
Our latest harvest features premium Arabica beans from the finest Parainema micro-lots on our fourth-generation family farm. Parainema, known for its large beans, offers a distinctive cup profile characterized by brightness, balance, and smoothness, with unmistakable tropical fruit notes. Additional flavor notes include hints of caramel and vanilla, creating a medium-bodied coffee with a lingering creamy mouthfeel.
These specialty green coffee beans meet strict criteria, with no more than 5 defects per 300 grams and a moisture content between 11-12%. Grown strictly under shade at 4,000 feet above sea level, harvested by hand, and prepared with European precision, they are fully washed and naturally dried.
